Vines planted on the terrace, pruned in goblet, worked entirely by hand.
Average age of the vines: 50 years (white) and 80 years (red).
Vinification & Aging process
Red
Selection of the best plots of our colliourenc terroir.
Manual harvest in boxes of 10 kg.
Storage of the grapes for 48 hours at 5 degrees in a refrigerated room.
Manual sorting and placing in French oak barrels (500 litres) with separation by grape variety.
Slow fermentation at low temperature with daily punching down.
Five to six week maceration.
Assembly of free-run and press juices.
18 to 24 months of aging in barrels then 6 months of rest in vats before bottling.
White
Manual harvest in 10 kg boxes, at dawn to preserve the freshness and quality of the berries.
Storage of the grapes for 48 hours at 5 degrees in a refrigerated room.
Pressing in whole bunches and separation of juices by quality.
Light settling, cold, in temperature-controlled stainless steel vats before barreling.
Slow fermentation in new French oak barrels (500 litres).
6 months aging on fine lees with weekly stirringaire.
