CHARACTERISTICS

Color: Pomegranate rosé, bluish reflections.

Nose: Subtle notes of raspberry and marra des bois.

Mouth: Lively attack, quickly evolving towards fat and sweetness which reflects the sunny and warm terroir from which it comes - gourmet rosé.

SERVING SUGGESTION

Pairings: Aperitif, fish in sauce, sashimi.

Best serve at: 10 – 12°C

PLOTS, TERROIR & VINEYARD MANAGEMENT

Degraded blue and gray shale, two plots facing South-West (Grenache Noir) and South (Mourvèdre).

Vines planted on the terrace, pruned in goblet, worked entirely by hand.

Average age of the vines: 80 years.

Vinification & aging process

Morning and partial harvest (thinning) of black grape varieties in 10 kg boxes, three weeks before the second harvest (intended for red wines) to preserve acidity and aromatic freshness.

Passage in cold room 48h.

Direct pressing in whole bunches and cold settling.

Slow fermentation at low temperature (15°C) in temperature-controlled stainless steel vats.

Aging on fine lees until bottling in the spring.
