Degraded blue and gray shale, two plots facing South-West (Grenache Noir) and South (Mourvèdre).
Vines planted on the terrace, pruned in goblet, worked entirely by hand.
Average age of the vines: 80 years.
Vinification & aging process
Manual harvest in boxes of 10 kg.
Storage of the grapes in a cold room for 48 hours.
Put in stainless steel vats with separation by grape variety and parcel quality.
Pre-fermentation cold maceration.
Fermentation with daily punching down and pumping over.
Three weeks of vatting.
One year of ageing: 30% in sandstone amphora, 60% in vats.
