Color: Sustained yellow, golden and shiny reflections.

Nose: Floral, mineral, slightly buttery.

Mouth: Fresh attack, fine and creamy bubbles, accompanied by mineral notes and white-fleshed fruits (pear).

Pairings: Aperitif, foie gras, festive meal, fresh fruit tart from Roussillon.

PLOTS, TERROIR & VINEYARD MANAGEMENT

Argelès-sur-Mer sector: very deep, cool, sandy loam alluvium, along the river and 800 meters from the beaches.

Average age of the vines: 10 years.

Vinification & aging process

Mechanical harvesting at night to preserve the freshness and quality of the grapes.

Light settling to bring fat and substance to the wine.

Long fermentation at low temperature to preserve the finesse of the Chardonnay.

Foaming according to the traditional method, in the bottle.

9 to 15 months aging on slats bringing roundness and complexity.

Disgorgement at the end of the year.
