Mechanical harvesting at night to preserve the freshness and quality of the grapes.
Light settling to bring fat and substance to the wine.
Long fermentation at low temperature to preserve the finesse of the Chardonnay.
Foaming according to the traditional method, in the bottle.
9 to 15 months aging on slats bringing roundness and complexity.
Disgorgement at the end of the year.
