CHARACTERISTICS​

Color: Garnet red, very dark, almost opaque.

Nose: Kirsh cherry, blackberry jam, cocoa.

Mouth: Soft attack, robust tannins cut for laying down, great aromatic complexity, warm finish.

SERVING SUGGESTION​

Pairings: Foie gras, duck breast, confit, tomme de brebis, black forest, chocolate truffles.

Best serve at: 10°C

PLOTS, TERROIR & VINEYARD MANAGEMENT

Degraded blue and gray shales exposed North-West.

Vines planted on the terrace, pruned in goblet, worked entirely by hand.

Average age of the vines: 70 years.

Vinification & aging process

Selection of grapes harvested at high maturity on our most exposed plots of Collioure, favoring the expression of the fruit and a great richness in sugar.

Manual harvest in boxes of 10 kg.

48 hours of storage of the grapes at 5 degrees in a refrigerated room.

Destemming, placing in stainless steel vats and 5 days of pre-fermentation cold maceration.

Fermentation with daily punching down and pumping over.

Mutage under marc with grape alcohol followed by 3 to 4 weeks of maceration under marc.

Assembly of free-run and press juices.

Six months to a year of aging in vats before bottling.
