Vines planted on the terrace, pruned in goblet, worked entirely by hand.
Average age of the vines: 70 years.
Vinification & aging process
Selection of grapes harvested at high maturity on our most exposed plots of Collioure, favoring the expression of the fruit and a great richness in sugar.
Manual harvest in boxes of 10 kg.
48 hours of storage of the grapes at 5 degrees in a refrigerated room.
Destemming, placing in stainless steel vats and 5 days of pre-fermentation cold maceration.
Fermentation with daily punching down and pumping over.
Mutage under marc with grape alcohol followed by 3 to 4 weeks of maceration under marc.
Assembly of free-run and press juices.
Six months to a year of aging in vats before bottling.
